Merry Christmas ya’ll! It’s a beautiful day in Hawaii….somewhere in the 70’s. Not exactly a white Christmas but a beautiful one nonetheless. In case you need an easy cookie for a party, here’s a good one. It comes from one of my mom’s friends. I don’t remember her name, but I remember her food and it was all really good. Sorry mom’s friend!
For this recipe….I use regular jar peanut butter and Hershey’s Kisses and Reeses’ mini peanut butter cups…. Not something I keep around 364 days out of the year. But, I adore these cookies and associate them with Christmas and they’re peanut butter and chocolate. So, I’m a bit helpless around them. And since my husband actually likes peanut butter and chocolate he’ll have a few. Rare. Very rare he’ll eat sweets. I love that man.
Peanut Butter Stars
1/2 C butter, room temperature (1 stick)
1/2 C peanut butter
1/2 C sugar
1/2 C brown sugar
1/2 tsp vanilla
1 1/4 C sifted flour (I never sift it)
3/4 tsp baking soda
1/4 tsp salt
Extra granulated sugar to roll the cookies in before baking
Milk chocolate stars, unwrapped (Hershey kisses or mini peanut butter cups – I normally use a mix)
Preheat oven to 375 degrees. Cream together butter, peanut butter, both sugars, egg, and vanilla. Sift (or not) dry ingredients and blend into creamed mixture. Shape into 1″ balls, roll in granulated sugar. Place 2″ apart on an ungreased cookie sheet. Bake at 375 degrees for 10-12 minutes. Press a star or candy on each, cool slightly, and remove from pan. Makes about 30 cookies.
